Sambal roa may be one of your favorite Indonesian chili sauces that you often use as a side dish or even dip. For those of you who don't know the Minahasa people's chili sauce which is popular in Manado and also Gorontalo.
Sambal roa is made from roa fish or sea fish, a type of flying fish that is dried, then cooked with chili ingredients such as chili and shallots. In North Sulawesi, the familiar roa fish sauce is a complementary menu for yellow rice, tinutuan porridge, or goroho banana dip. Likewise in Gorontalo, a bowl of sagela porridge would not be complete without this spicy smoked fish sauce.
