Tapioca flakes are the basic starch products derived from the processing the root of the plant species Manihot esculenta, commonly known as cassava, manioc and yucca, which is very starchy, but gluten-free .

As the root is broken down and heated, the starch particles expand and break apart from one another into small pieces. They are further processed, colored and dried as Tapioca Flakes.
